Spinach & Zucchini Protein Pancakes

Oh man! I LOVE MY READERS!


Thank you to the reader who emailed this to me. I always love a good laugh! :)

But really, I love my happy (and not so happy) readers. Snide, anonymous, comments and all (you know who you are). I'm sure the folks behind such comments would like to hear me say that their rudeness got me down, but it doesn't. Honestly, this is the internet. I am not going to let some clown who berates me anonymously from behind the safety of their computer monitor, bother me.

I am not your 8th grade home room teacher. Following my blog is not your homework. No one is forcing my writing down your throat or images of my amazing waffles onto your computer screen. Spinach Zucchini Protein Pancakes
Serves 1

1/4 cup oats (or 1/4 cup almond flour) I used TJ's Gluten Free Rolled Oats
1/4 cup cottage cheese (or greek yogurt)
1/2 cup egg whites
3/4 cup spinach
1/4 cup shredded zucchini
1 scoop of protein powder (or 2 tbsp coconut flour)
1 tsp baking powder

Optional: Cinnamon, vanilla extra, liquid Stevia drops, pitted dates, etc.

Combine all of the ingredients in a blender and mix well. I used my Magic Bullet. I promise, no additional liquid is needed because the zucchini is so moist! Pour spoonfuls onto a lightly greased skillet heated to medium-low. Flip right when bubbles begin to pop (they brown quickly!).

Nutrition Stats (for the entire recipe!)

290 calories
5g fat
19g carbs
3g fiber
3g sugar
48g protein (!!)

That frosting you see? Is cottage cheese + a few frozen raspberries + a smidge of banana for sweetness (could also use a pitted date, Stevia drops, etc), whipped in the trusty Bullet of Magicalness for a few seconds. Yum! (not included in nutritional stats).

    And haters gonna hate. At the end of the day, they don't know you nor do they care to. They're the same people who were bullies in middle school, simply because they could be. And good for you for telling them to eff off, ever so politely.

    The nutrition stats say 290 cal, is that for 6-7 small/3 large pancakes or just 1 pancake?

  8. You're AWESOME! But seriously, how do you have time to cook all of these scrumptious meals? What would be your recommendation for getting the same nutrition, protein and deliciousness with less time/on the go?

    1. You have to meal prep! Take a few hours on the weekends, cook everything, freeze half of it, and you're good to go!

    2. You can make a big batch of these, and freeze them. Then, pop them in the toaster or toaster oven when you're on your way out the door.

    I love your recipes and your always a motivation for me the annoymous assholes are fucken loosers who troll your website because there proably pathetic and have no amazing awesomness of there own so the saying goes you have haters you must be doing something right!!!   13. I recently read the book Assholes: A Theory. After doing so, I have vowed to never engage with an asshole, either in real life, or virtual life. And I have followed through. It was hard at first. Walking away is so hard. At first. But, once I realized that all engaging with them did was get me upset, rather than show them the error of their ways, I was able to just let it go. A while back, some woman gave you a hard time for listening to Dr. Laura, and I thought you handled it beautifully. In handling that way, you emphasized what a dope she was. I do a lot of behavior modification with special education/behaviorally challenged students and without doubt, the best way to extinguish a behavior is to ignore it. It does tend to lead to an extinction burst, which means it gets worse before it gets better. But in the end, it goes away. Ignore those that chose to be negative. Another good book to read is Walking on Eggshells. It deals specifically with border line personality disorders, but is good as a "tool box" for dealing with all kinds of distasteful individuals. What the author makes clear is that these kinds of people are way more skilled at what they do (make others miserable) than anything we can do to change them.

    Anywho, I need to practice making that cottage cheese frosting. I can't seem to get it super smooth. Still yummy though!

  16. AMAZING! I even added your whipped cottage cheese (I hate cottage cheese) WOW! I don't think I will ever make regular pancakes again! My super picky kid gobbled them up. Keep the concoctions coming!
