Here's a Little Ass

It's hitting me.

This move ... I think it's really starting to hit me. The reality of being a full-time student again and living states apart from my husband - it's all hitting me. I'm excited! But, anxious. I'm trying not to worry and think of everything that could possibly go wrong.


It seemed like I had months to prepare and pack and plan ... and now, all of the sudden, I'm moving in 2 weeks. Time flies!

I have a million things going on between packing, getting my husband situated and moved, getting my school affairs in order, finding housing, organizing the finances, damn. Pour this girl a drink, please!

Earlier today, I had the rug pulled out from under me (it's a good thing I went to an awesome Spin class this morning to load me up on endorphins beforehand), but it seems my housing situation has fallen through. I was really excited about it too! But oh well, sh*t happens. Thank goodness for friends who offered to take me in while I'm getting settled.

In the meantime, my frazzled brain needs to just dump. Photo dump, that is.


Apparently my creative juices really start to flow when I'm stressed: this morning's turkey sausage was a little different than normal. I threw some almond butter and SF maple syrup on them and warmed them in the microwave and HOLY MOLY, it was so good! 


And then there's nothing like a little retail therapy to help soothe frazzled nerves. 

Or gooey, drippy, Quest bars ... 


Sorry, that was last night's dessert. Which I'm about to go repeat, right meow. Well, right after I share tonight's epic dinner ... 


... a creation, that's for sure. So, I finally roasted my first spaghetti squash and decided to make a savory pancake out of it, to go along with my meatloaf. This was crazy good! And so simple!

1/3 cup egg whites + 1 tbsp coconut flour + seasonings + 2/3 cup squash

Mixed all together and then poured into the griddle (on medium-low heat) to make a big flap-jack type thing, which I then topped with my crumbled up meatloaf, sugar-free ketchup and nooch. 

Definitely going to make a sweeter version of this pancake tomorrow morning, when I get back from my first ever BODY PUMP class!

  1. Oh, man, I hate to hear things aren't shaking out completely right for you. Things somehow always work themselves out, though.

    I LOVE spaghetti squash pizza crust. After roasting, cooling, and pulling the spaghetti from the squash, squeeze excess moisture and mix with 2 egg whites or 1 whole egg and whatever pizza seasoning you prefer. Bake for 35 minutes at 400. Load it up with pizza toppings and bake for another 15 or so. So good.

    Body Pump...meh...not for me, but you may like it, so give it a go!

  2. I have never tried spaghetti squash :-o! I have not bathing suit shopped yet either... but I have tried body pump and love it :)

    1. I always thought it would be so hard to make, but it's so easy! You just poke a bunch of holes in the squash (nope, don't even cut it), throw it in the oven at 375 for an hour and a half, let it cool, cut it open, scoop out seeds, and then scrape it out with a fork. I portioned it out in the refrigerator, it stays for at least 3 days. I hope you try it, it's so good and really fun! It tastes just like plain noodles!

  3. I like the spaghetti squash pancake idea...But then again anything with the word "pancake" in it works for me! I have not gone bathing suit shopping yet, but was going to scope out VS's online. No body pump. Now that I have a Quest bar in my cupboard I'm going to have to try this combo. ;)

    1. So many adorable swimming options right now at VS! I'd never purchased one of their suits, so going in and trying on the sizes was my best bet; NOW I can shop online. ;)

  4. Bummer on the housing situation, I can definitely relate to that! But, it will all work out okay in the end...and that's great you have friends to help ya out!

    Your bathing suit pic just reminded me how excited I am for some fun in the sun this summer...I need a tan in a bad way :)

    I used to LOVE body pump! It's how I learned proper weight lifting form when I was a beginner at the gym. It's a great way to switch up your routine every now and then. I don't have a body pump class to go to anymore, but given the opportunity, I'd definitely go! Enjoy!

  5. I have a healthy version of chicken Alfredo that uses spaghetti squash as the "noodles".
    I bought two swimming suits last week! I'm not confident to rock a bikini yet...hopefully next year! :)
    Never tried body pump but I've heard good things!

  7. I hope you find a place soon and you have an awesome physique. I love Quest bars and love Banana nut and chocolate cookie dough! I love eating the squash with meatballs

    i'm leaving next sat AM for army training that i've been waiting a year to go too--now that it's almost here i'm full of nerves/anxiety/stress/excitement too. & i'm not ready to leave my man etiher =/

  10. I just like putting some turkey meatballs with my spaghetti squash, I've been craving it for a while now! No bathing suit shopping for me, mine is still in good shape, and honestly it didn't get used to much last summer lol. I need to find me some Quest bars!

  11. Quick meal - throw Rao's marinara on it and add ground beef, sausages, or turkey burger along with moar veggies!

  12. I stirred bacon and raisins and feta cheese into some leftover spaghetti squash awhile ago and it was sooo good! But hey, it had bacon and cheese in it so what's not to like, right?

    I own a jillion bikinis but am stalking this pretty white one with pale pink flowers & ruffles in all the right places this spring. So pretty!

  13. Good luck on the housing situation and moving. Don't worry, it will all work out how it should. When I decided to go back to school to be an RD, I moved half way across the country while my husband stayed on the East coast. It was so hard, but the time flew by because I worked full time, took max credit hours, and completely immersed myself in my future career. Now I am back with him on the east coast and we are as happy (and firmly planted) as can be. It is ALL WORTH IT!!

    Love your peck muscles in that suit top. I haven't purchased mine for the season yet! Gotta get to Vicki's.

    I first learned how to lift weights by going to Body Pump (form/ etc). I now usually do my own thing (cross fit style workout) since we have our own gym. I'll hit up Body pump every so often just for a change or days that I don't feel like lifting but want to move. :)

  15. OOOHHHH, if you like thai food, try the spaghetti squash with shredded chicken, shredded carrots for crunch, a few chopped peanuts, cilantro, green onions, and thai peanut noodle sauce. I'm drooling thinking about it....Too yummy.
