Rest days are the best days, especially when they coincide with days off from work.

It felt so good to catch up on sleep and take my sweet time in the kitchen this morning whipping up a delicious breakfast. And to eat it at a table! Not in my lap, while steering my 5-speed Honda through Atlanta traffic ... I think my left foot may fall of at times, I let the clutch in and out maybe 19 million times a day? Not counting or anything.
Glorious breakfast consisted of spinach protein waffles, topped with a strawberry reduction, PB2 and unsweetened coconut flakes.
Then I was off to the dentist, again. Sweet things happening with my smile in the coming weeks. (No more smiling with my mouth closed or turning to the side for pictures ... )
I've made some super tasty concoctions the last few days ...
Cocoa Roasted Almonds, anyone?
Since I've given up nut butters of the month of April, I'm turning to actual nuts instead. They're a little bit harder to eat by the spoonful ... now I find myself eating nuts by the handful. I'm a hopeless mess!

I roasted chopped okra and petite baby carrots tonight for dinner, and they turned out fantastic! All I did was spray them with the misto sprayer (which I fill with grape seed oil), give them a good spray, shook them around on an aluminum-foil lined pan, a little sea salt and garlic pepper, another spray with the misto, another little shake shake of the pan, and into the oven they went.
Bake at 400 for 20 minutes, give them a shake shake, another 15 minutes in the oven, and enjoy!
They're light and crispy, and the carrots taste and feel just like sweet potato fries (I even dip them in ketchup!)

I love toasted hazelnuts and walnuts. But, I LOVE honey roasted peanuts. Especially when they're ground up and turned into butter .... *drool*
