Mind the (Thigh) Gap

Rest days are the best days, especially when they coincide with days off from work.

Happy sigh. :)

It felt so good to catch up on sleep and take my sweet time in the kitchen this morning whipping up a delicious breakfast. And to eat it at a table! Not in my lap, while steering my 5-speed Honda through Atlanta traffic ... I think my left foot may fall of at times, I let the clutch in and out maybe 19 million times a day? Not counting or anything.

Glorious breakfast consisted of spinach protein waffles, topped with a strawberry reduction, PB2 and unsweetened coconut flakes.

Then I was off to the dentist, again. Sweet things happening with my smile in the coming weeks. (No more smiling with my mouth closed or turning to the side for pictures ... )

I've made some super tasty concoctions the last few days ...

Cocoa Roasted Almonds, anyone?

Since I've given up nut butters of the month of April, I'm turning to actual nuts instead. They're a little bit harder to eat by the spoonful ... now I find myself eating nuts by the handful. I'm a hopeless mess!

Interested in making your own Cocoa Roast Almonds? Check out these recipes here and here. I combined the two, they turned out amazing! I don't think you can really go wrong. ;)

I roasted chopped okra and petite baby carrots tonight for dinner, and they turned out fantastic! All I did was spray them with the misto sprayer (which I fill with grape seed oil), give them a good spray, shook them around on an aluminum-foil lined pan, a little sea salt and garlic pepper, another spray with the misto, another little shake shake of the pan, and into the oven they went.

Bake at 400 for 20 minutes, give them a shake shake, another 15 minutes in the oven, and enjoy!

They're light and crispy, and the carrots taste and feel just like sweet potato fries (I even dip them in ketchup!)

Not sure what a misto is? Check this out.

And some random photos over the last few days ...

Happy Hump Day!

What's your favorite yoga pose?
Savasana ... Don't judge.

Are you watching the 13.5 announcement tonight?
Dur! Can't wait. Counting down the seconds until I see my husband Rich Froning!
Did you watch Rory and Adrian go at it last week? Think they will tonight, too?

What's your favorite nut?
I love toasted hazelnuts and walnuts. But, I LOVE honey roasted peanuts. Especially when they're ground up and turned into butter .... *drool*

  3. mmm those waffles.....
That thigh gap picture kills me, as does the fact that your favorite yoga pose is savasana. My fave is child's pose!
I could eat almonds all day. Roasted, salted, you name it, I love 'em.

  4. All of your food pics make me want to nom so bad... Just wondering, is there a reason that you use grapeseed oil, as opposed to any other? I lost my misto in one of my many PCSings, and I forgot how fab it is. Thanks for the reminder!

Also, Rich Froning KILLED (speaking of making me want to nom...) :)

    1. I like to play around with a lot of different oils, this grape seed oil happened to be on sale at Whole Foods, high quality, couldn't turn it down. I also have avocado oils, regular olive oil. Elana's Pantry turned me onto Grapeseed oil ... http://www.elanaspantry.com/ingredients/grapeseed-oil/

  5. My favorite yoga position is a toss up between Pigeon and Triangle pose. I love feeling that hip/inner thigh stretch. So yummy.
I ran home from work to watch my girl Cammie kick ass last night. She's such a beast, and I loved watching Briggs cheer her on!

  8. I love the thigh gap picture lol I'm working on mine. And your sister's picture cracked me up!

Favorite yoga pose, pigeon. Stretches my glute well.

I didn't get to watch the announcement live b/c their streaming was bad. A lot of people had issues. Camille is one of my favorite women Crossfitters. Rich is the man!
Not that long ago, the Crossfit Community site had a series on the day in the life of Rich Froning with his wife (Yes, Rich Froning is married.) Not only is he a great athlete, but he seems like a genuinely nice and humble guy.

I love pistachios, but I don't think they make that into a butter.

    1. My best friend in Texas was also one of those caught up in the bad Live Stream, so she called me and we FaceTimed, since my connection was fine, she watched it that way. Don't you love technology?
