Clean Eating Apple Streusel Muffins

I recently downloaded Balanced Bites 21-Day Sugar Detox, I love it! 


She's coming out with a hard-copy this October, can't wait!


While I am not doing the 21-Day Detox, I still find the recipes to be fabulous!

 (I like to think I eat 80% clean all of the time. And things like Whole 30, Paleo Challenges - they are too restrictive for me. They're more harmful than hurtful to my psyche. I'm a giant wiener, I know.)

One of her recipes (from Practical Paleo) in particular has been on my mind for days: her Apple Streusel Muffins. I didn't quite have everything I needed on hand, so I made due. And my version turned out wonderfully. 


When the Husband eats three in less than 2 minutes, you know you're on to something ... 

{Clean Eating Apple Streusel Muffins}

Makes 12 muffins
15 minutes prep
35 minutes baking time

{Ingredients}
  • 3 apples, chopped into small pieces (I left the skin on)
  • A few tablespoons water
  • 2 teaspoons apple pie spice, divided
  • 4 eggs
  • 1 cup egg whites
  • 1/3 cup unsweetened applesauce
  • 1 tbsp butter (or coconut oil for dairy-free), melted
  • 3 tablespoons So Delicious Coconut creamer
  • 1.5 tbsp coconut flour, sifted
  • 1/4 tsp baking soda
  • Dash of salt
  • 1/4 cup toasted walnut halves
{Directions}
  1. Preheat oven to 350. 
  2. In a cast iron skillet, sauté apples in apple pie spice with water until they resemble chunky applesauce. (This wasn't happening for me for some reason, so as they softened up, I mashed them with a fork and then added in 1/4 cup applesauce. I cooled the mixture in the freezer while I prepared the rest of the recipe.
  3. In a medium bowl, whisk together eggs, egg whites, coconut flour, butter, salt, creamer, baking soda and the remainder of the apple pie spice.
  4. Add the cooled apples, leaving out 1/4 of the mixture for the streusel topping.
  5. Spoon the mixture into evenly into 12 baking tin lined with silicone baking cups (I lightly sprayed mine with cooking oil, they just pop right out when they're done!)
  6. Bake for 15 minutes.
  7. While they're baking, toast your walnuts in the microwave (microwave on high for 1 minute), break them up into small bits and add them into your leftover apple mixture. Add the rest of the applesauce to the mixture. 
  8. Pull the muffins out of the oven, and spoon the remainder of the streusel topping over the muffins evenly. Place back in the oven and cook for another 10-15 minutes, until tops are lightly browned.
Total baking time should be 30-35 minutes.

*Walnuts are optional in topping, but my nutrition stats reflect them in the recipe.
*For added sweeteness, try adding a Stevia drops to the batter (15-20 drops).

Per 1 Muffin:

77 calories
5g fat
7g carb
2g fiber
5g of sugar
5g protein



I've enjoyed two already! Delicious topped with a little sugar-free jelly.


Don't mind the haggard cuticles. I'll make up for them by posting adorable photos of the furturd.

  2. To help keep his eyes from staining red (they still will get waterey but won't leave the red) get Angel Eyes at Costco! Sprinkle a little on his food a few times a week and the redness will start to stop. :)

    Muffins or Doughnuts... hmmmmmm. Probably muffins because they come in mooe flavors!

  3. For me, that quote means that though storms and trials will come, I won't fear, because I will learn to navigate through them, just as I am learning to navigate through the beautiful and fair-weathered parts of life.

    Muffins, for sure! (Although, I will drop just about anything for a chocolate long-john from Heaven Scent!) There are more flavors to choose from- blueberry, apple cinnamon, banana nut...

  5. I'm learning to deal with stress and will guide my way through life.
    Those look so good!! My cat loves to sleep next to me :) sometimes when me and my bf take a nap she will cuddle in between us lol. Muffins all the way!

  6. I absolutely adore the 21DSD recipes. She's pure genius! I would actually take cupcakes over donuts or muffins ;) but given the choice I'd stick with donuts. I just had the most amazing specialty donuts at the Chelsea Market this weekend in the city. Holy yum.
