Egg-cellent!

Oh eggs, how do I love thee? Let me count the ways ...

 
I scramble them and have them with turkey meatballs, goat cheese and broccoli for dinner.


I whip them into my creamy dreamy oatmeal for breakfast. 


 I let the yolks run wild amongst sweet bell peppers and feta cheese in an afternoon omelet.


I whisk them into my spinach protein waffles.


I order them stuffed with smoked chicken, bell peppers, zucchini and goat cheese for breakfast. And then drown them in Cholula. 


I fold them into an omlette, stuffed with Applegate turkey bacon, spinach, red bell peppers and fresh dill, and make them cozy up to a side of fresh fruit.


 I soft-ish boil my beloved eggs, so I can stuff my face with them whenever I'm on the go.


And thank goodness for digestive enzymes, or my husband would be kicking me to the couch at night! (And I thought I was being a good wife and helping him control his blood pressure).

  1. I have them sunny side up and I love the till, not too cook and with Sirarcha or Jabanero sauce! And I also put eggs on my oatmeal(got it from your blog;).

  3. I don't think I've ever met an egg I didn't like... So all ways! �� And I eat them almost every day. My favorite breakfast or quick dinner!

  4. MMMMMM... Had some for breakfast today. Sunny side up on top of arugula, avocado, bacon and tomato. Will have some in the am with spinach and mushrooms and probably avocado since it's a two-fer training in the morning. HIIT/Chaos for 45 minutes and then 1 hour upper body training...around 40 minutes or so.. YUMMY. I eat at least one whole egg and 2 egg whites almost every single day. Love them.

  5. I eat some form of an egg every day. They are a great source of protein whether eaten as a snack or a meal. My two favorite eggs are poached and over easy. I absolutely love a runny yolk. Last week I was hooked on sweet potato rounds topped with a runny egg and avocado. So creamy and delicious!!

    1. I've never made a poached egg! I have a feeling I'd love all that soft, yolk-y, gooey-ness though, mmm!

  6. I eat eggs everyday! I can't handle the runny stuff though, I'm paranoid it's not cooked and it doesn't look appealing to me. Also, since starting MFP, I had no idea how much fat was in eggs. Interesting.

    1. Is that a good thing to you or a bad thing? They're incredibly nutrient-rich. Also, if you don't like or are nervous of un-cooked eggs, go for pasteurized egg whites - safe to eat raw!

  7. I eat eggs everyday, sometimes for every meal. I have a flock of chickens, so my eggs are always fresh and so delicious. Eggs are good no matter how you cook them, and so convenient and fast!!

    1. Lucky girl! I grew up on a farm, so I miss being able to walk out to the coop, pluck a warm egg right from the nest, and crack it right into the griddle. The yolks are like BUTTER!

  8. I love eggs and eat them everyday and even in the afternoon for a snack! I also make protein pancakes with eggs,cottage cheese, oatmeal and i blend it in blender.

    1. I miss cottage cheese! I was only able to stomach one brand, Lactaid (lactose-free), and haven't been able to find it out here in ATL for the life of me.

  9. Every Sunday I boil over a dozen eggs and make our grab-n-go breakfasts that takes over two dozen egg whites, so daily!

    By the way, Did you ever get the Spark I sent you!? Hope all is well!

    1. Yes m'am, I did. And I'm trying it first thing tomorrow morning! I was torn because I'm a coffee drinker, so I was putting off taking it, because I didn't know if I should drink that AND coffee, I don't know if I could stomach it. We'll see though!

  11. Soft boiled on everything! So delicious. Love Cholula but I'm big on Crystal right now, it has no sugar. Once I found a hot sauce with no sugar I agreed to try cutting sugar out for a bit. But when no sugar meant no hot sauce I was NOT on board. Couldn't survive!!!

    1. I can't say that I eat enough hot sauce to ever really mind the few grams of sugar in it. But, I do know what you mean. I will keep my eye peels for Crystal!

  13. I eat 5 egg whites and 1 whole egg every morning scrambled in coconut oil with veggies. I love eggs and could eat them for breakfast, lunch and dinner, no problem! Cheapest protein there is! :)

  14. I <3 the incredible edible egg ;) I eat the 7 days a week, and usually make your oatless "oats" with them, topped with PB2, walnuts and cal free syrup, YUMMY!!! Then for snack, 1 egg and 1/2 cup whites and spinach and I love it when the yolk is runny! Also today features 2 boiled for afternoon snack :) Safe to say, they're a staple in my fridge :)
