Oh eggs, how do I love thee? Let me count the ways ...
I scramble them and have them with turkey meatballs, goat cheese and broccoli for dinner.
I whip them into my creamy dreamy oatmeal for breakfast.
I let the yolks run wild amongst sweet bell peppers and feta cheese in an afternoon omelet.
I whisk them into my spinach protein waffles.
I order them stuffed with smoked chicken, bell peppers, zucchini and goat cheese for breakfast. And then drown them in Cholula.
I fold them into an omlette, stuffed with Applegate turkey bacon, spinach, red bell peppers and fresh dill, and make them cozy up to a side of fresh fruit.
I soft-ish boil my beloved eggs, so I can stuff my face with them whenever I'm on the go.
And thank goodness for digestive enzymes, or my husband would be kicking me to the couch at night! (And I thought I was being a good wife and helping him control his blood pressure).
