Popeye's Pancakes

Mary beat me up! My quads and lats are sad, sore pieces of rubber after yesterday. Spin class, mobility, and another adventure on the Stairway to Nowhere helped work out some of the junk.




The Spin class was pretty weak sauce today. The instructor was sweet, but her class was a little too tame for my liking. So, I made up for it with some brutal speed intervals.

I was starving when I got home. Working up a SWEAT makes this girl HUN-gray. I have been craving pancakes for days, and that's just what I whipped up, pancakes, Popeye-style!


Popeye Pancakes

Serves 1 (makes 3 small pancakes)

Ingredients
1/2 cup Bisquick Heart Health mix
1/3 cup unsweetened almond milk
1 tbsp egg white
1 to 2 cups leafy greens
1/4 of a very ripe banana
dash cinnamon
dash of vanilla extract

Blend all ingredients together in a food processor or Magic Bullet. Grease then heat a skillet to medium-low. Whatever you do, it's better to cook these low and slow, rather than faster and and at a higher temperature! Pour 1/3 of the batter into the skillet and let cook. When bubbles begin to form, and just when they begin to pop, it's time to flip.


I topped mine with PB2, sugar-free syrup, toasted walnuts for fat and a dollop of 2% Fage Greek Yogurt for protein.

I'd never made pancakes from Bisquick Heart Healthy before, but we had it in the pantry, and I'm running low on my normal pancake ingredients (coconut flour, low-carb flour, etc). I think the pancakes came out light and fluffy! There are so many healthy pancake mixes out there, this is just what I had on hand (for those nights the husband craves biscuits or those Sunday mornings he wants pancakes). He won't touch any of my "healthy" recipes. ;)

I do believe you can add a cup or two of spinach to any pancake recipe. Just make sure you add that 1/4th of banana to cover up the "earthy" taste. 


We saw Zero Dark Thirty this afternoon, and while it was long, it was incredibly well done! I think I was in the mood to laugh when we got home though, because I rented Pitch Perfect on our Xbox. And after seeing Fat Amy's horizontal running, I was hooked. I will totes be watching it again whilst cleaning the casa tomorrow!

  1. i've never hidden my veggies in my food, i'm always afraid and about 99% sure it would come out horrible if i made lol. last movie i saw in theatre was the hobbit!! i really need to see pitch perfect though. last movie i rented was....the raven! amazeballs movie btw!

  3. Carrots and spinach in meatballs. Since we use venison and there is such a small fat content, you have to go heavier with the carrots, otherwise a similar issue occurs and the spinach essence is too much. I also use venison for mini meatloafs and I put everything in the food processor and throw that in there - cauliflower, broccoli, onions (red and white), peppers, carrots, spinach, kale.

    Movie in the theater - Wreck it Ralph (loved it).
    Rented move - Unstoppable (Chris Pine, Denzel Washington) and Contagion (Matt Damon, Kate Winslet...). Pitch Perfect was really cute. Predictable, but cute.

    I clean on Saturday after my long run but usually have to do a quick mid-week vacuum to deal with the pet hair.

    1. I am vacuuming every day! Not sure if it's the pet hair that keeps me coming back, or my OCD. I really like the lines in the carpet .... ;)

    I tend to fall asleep during ALL movies, but someho Le Mis kept me awake the entire time. I think it was the music. I really really enjoyed it!

  6. I HAD to see This is 40, I absolutely love those 2 together. It was such a fun movie. There are so many good movies out but I prefer to do Redbox so I"m looking forward to when they all come out on video.

    Whenever I try to make protein pancakes, I swear 99% of the time they're mushy or flat or the texture is just off, and I end up tossing them and making eggy oatmeal (I cant eat oatmeal without the egg whites anymore, the texture is 10x better). I also refuse to give up my sugar free syrup. Whole wheat flour usually helps, but I feel like for the most part, pancakes can't be messed with too much. I'm always on the lookout for clean or cleaner pancake recipes that taste like actual pancakes. :) It's not me, it's them, I swear! ;)

    1. Oh, I saw This is 40 with my girls in Texas. A GREAT movie to see with a group of gal pals! You should really try this Bisquick Heart Healthy mix, and this recipe. I promise, they are light and fluffy, and if you eat them with a side of Fage Greek yogurt, you're getting a really well rounded meal of protein and carbs. ;)

  7. - I basically put spinach in everything we make! It might not always be hidden but it is always delicious.

    - I try to clean throughout the week, but normally Wednesday is my day to do everything!

  8. I eat spinach daily, usually in my eggs, and when I make a fruit smoothie, it goes in there too (along with half a frozen nanner and some berries.
    This is 40 (loved it) and Jack Reacher (REALLY good too)
    I try to clean a little every day, but do a good deep cleaning on the weekends if/when time allows. Then the furbabies destroy it... ;)

    Last movie I rented was Eat Love Pray from my Netflix. Still haven't watched it.

  10. Courtney I am beyond grateful that I found ur Facebook page which led me to ur blog. Today I tried the spinach pancakes and loved them. I'm new to the healthy eating journey and of course crossfit. I was afraid to try them, but once I saw ur pics I had to try. I couldn't find the pancake mix u used, so I bought Bob's pancake and waffle mix. Topped with almond butter, mixed nuts, and Greek yogurt. Plus a side of fruit. I didn't use syrup cuz I overdue it.
