I ran this morning.
I had every intention of doing a WOD at the box before assistant coaching the noon class, but when I saw how stunning it was outside (insert images of the most perfect fall morning here), the only thing that sounded good was spending quality time with mamma nature.
The local gym I belong to happens to be about 3 miles away, so I thought I'd make that my turn around point (to hydrate/potty of needed). While I was there, I decided to spend 15 minutes climbing stairs, and about 10 minutes Spinning. Because getting on a Spin bike reminds me of Texas. *Tear* For a second I think I'm back in Jose's class ...
The gym also has televisions by the cardio equipment. So, now it's nice to go when I need to see some movie previews, watch some trashy VH1 or Desperate Housewives, catch some Debate news, etc. It's weird not having cable. Weird, because I just realized this movie is coming out on November 16. I kind of feel like I live under a rock.
As terrible as the last one was, I do want to see this one. If only for summa this ...
Oh that's right, we were talking about running ...
After the run, I walked the fur nugget for about a mile. We are trying to work on his endurance (he almost has me beat), and his need to pee. On errythang.
I headed out to the box to shadow/assistant coach. I'm trying to shadow and coach as many classes as I can before my Level 1 Cert (in less than two weeks!) so that I can just hit the ground running with my own roster and class schedule.
Such a newb. Can't even match socks. Or find anything that fit at Marshall's. #fail

Go find these chips at TJ's now. Dip them in this creamy goat cheese. Go, go, go!
And their salsa verde is good on everything. Mixed in with tuna I though I'd just recreated the wheel or something. Awesome.
And just in case you can't tell how much I love Trader Joe's yet ...
Drum roll please, for the husband to take into the office tomorrow, I made pumpkin cookies from a box of Trader Joe's Pumpkin muffin mix. They should pay me for using their name so much.
But these cookies taste amazing. And they're so easy to make. So this makes them really amazing. Or makes me really lazy.
Soft in the middle, chewy on the outsides, just like a cookie should be.
I may not like Atlanta, but dammit if I don't love being close to a Trader Joes. All things TJ's have infiltrated my refrigerator, pantry and even bathroom. I love their lavender sugar scrub.
Soft Chocolate Chip Pumpkin MOOKIES
Made from muffin mix, but better as cookies.
Makes about 3 dozen
1/3 cup unsweetened applesauce
1/3 cup room temperature butter (I used Kerrygold)
1/3 cup Fage greek yogurt
3 tablespoons brown sugar
Dash of pumpkin pie spice
1 dash vanilla extract
1/2 cup white chocolate chips
1/2 cup semi sweet chocolate chips
1 box of Trader Joe's Pumpkin Bread & Muffin Mix
Blend the egg, applesauce, butter, yogurt, vanilla extract, pie spice, and brown sugar in a mixer until creamy. Slowly add (about 1/3 at a time) the dry muffin mix and chocolate chips until everything is well incorporated. Scrape down the sides, cover, and let the mixture sit at room temperature for about an hour.
Lightly grease a baking sheet and heat oven to 400 degrees. Drop tablespoon size mounds onto sheet and bake in the middle rack for 9 minutes. Cool on wire rack. Enjoy!
These would be awesome with some walnut or pecan pieces, too!
Has anyone been watching this? I totally missed it (what with not having cable), and can't wait for it to come out on Netflix or to download on the Xbox. This show is one of my favorites!
