2. I made tuna cakes last night for dinner! They were so simple and so easy and so good with cucumber chips (scoop a heap of the tuna cake onto a slice) and a bacon green bean salad on the side.
If you'd like to make them:
2 cans of chunk light tuna in water, drained
1 tbsp flax meal
1 tbsp Fage Greek Yogurt
spices (salt, fresh cracked pepper, cayenne)
1 tbsp spicy mustard
form into a patty and cook on griddle
garnish with fresh lemon juice
I may not eat refined carbs, but my husband still enjoys them in no apparent moderation ...
he ate his tuna cake between an Everything bagel spread with relish, mustard and a Laughing Cow cheese wedge and fresh spinach. It looked ridonkulously good. But I knew it wouldn't be worth the stomach ache.
I had some leftover green beans in the fridge asking to be eaten, so I sauteed them in a little onion, carrot and turkey bacon.
I even make sweet potato fries in coconut oil. How primal of me.
3. Breakfast is the best! If I have time, my favorite fuel pre-workout is fruit and Almond Breeze. Here I am eating berries with a few dried banana chips (unsweetened and made with coconut oil) in a chilly bowl of almond milk.
I'm obsessed with honeydew melon bowls.
Filled with a 1/4 c. Fage Greek Yogurt, blueberries, banan chips and a dollop of Sun Butter. But something strange happened yesterday. When I got back from the gym, I was so hungry. And for the first time, ever, leftovers sounded good. Cold, straight from the fridge, leftover paleo pizza hit the spot.
4. We're off to San Antonio River Walk tomorrow. James and I are celebrating our one year anniversary Saturday! I can't believe it's been a year already. Time flies when you're having fun and in love. We'll be checking into La Mansion and coming back Sunday evening. Even little Ellie pie is coming with us!
Speaking of the little devil, he's whimpering right now, begging that we go to bed. I'm going to try to get up early enough to get a work out in before our 2-hour quest south. I'm excited to check out the facilities they have at the hotel and to run along the Riverwalk in the morning.
