Killer Dark Chocolate Banana Brownies

Healthy brownies! Seriously? Can healthy and brownie ever really be used in the same sentence? It's like beach and library in the same sentence. Or happy and deployment. Or kids and stress-free. Or skinny and creme puffs. You catch my drift.

I promise healthy and brownie can really be used together in this sentence though. Observe.





These bites of Heaven will not disappoint your waistline or your conscience. 

Killer Dark Chocolate Banana Brownies
1 small over-ripened banana
1/2 cup sugar or equal amounts of Stevia (I used 5 packets)
1/2 cup unsweetened applesauce
6 tablespoons egg whites
1 tsp vanilla extract
1/3 cup unsweetened dark chocolate cocoa powder
1/4 cup flax seed meal (optional)
1/2 cup whole wheat flour
1/4 tsp salt
1/2 tsp baking powder
1/2 cup chopped walnuts (optional) 
1/2 cup bittersweet chocolate chunks (optional)
Pre-heat oven to 350 degrees. Grease an 8 inch square pan. In a bowl, smash banana with a fork. Stir in applesauce, vanilla extract and egg whites until well blended. Then, with a spatula, stir in all of the dry ingredients until mixture is just moistened. Stir in walnuts and chocolate chips. Pour into pan and bake for 20-30 minutes, depending on your oven. Insert toothpick until it comes out clean. Once they're cool, cut and top with a shake of pink sprinkles. :) Best if eaten warm. Pop in the microwave for 15-20 seconds before serving.

  3. Could I substitute either sweet potato flour or coconut flour for the wheat flour? I am Paleo and need an alternative for the flour and the sugar (though I am working on perfecting a sweet potato sugar/syrup that I could maybe use)
