Apple Pecan Tasties

Tempted, yet?

  • 1 stick butter, melted
  • 3/4 c. Splenda
  • 1/4-1/2 c. light brown sugar
  • 1 large Honeycrisp apple, peeled and diced
  • 1/2 cup chopped pecans
  • 1/3 cup dried cranberries
  • 1/2 cup all-purpose flour
  • 1/2 cup whole wheat flour 
  • 1/4 teaspoon sea salt
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon, nutmeg, pumpkin pie spice


  1. Preheat oven to 350 degrees.

  1.  Lightly dust a muffin pan.

  1. In a large bowl, beat together the melted butter, sugar, and egg until fluffy. Fold in the apples, pecans, cranberries. In a separate bowl, sift together the flour, salt, baking powder, baking soda, and cinnamon. Stir the flour mixture into the wet mixture until just blended. Spread the batter evenly into muffin pan.

  1. Bake 35 minutes in the preheated oven, or until a toothpick inserted in the center comes out clean.

Makes 12.
