Sivananda Oatmeal Cookies

Hold on to your yoga mats, these are delicious  and nutritious!
From this Army wife's kitchen to yours ...

Sivananda Oatmeal Cookies
1 cup chunky applesauce

1/4 cup honey
1 cup packed brown sugar
1 teaspoon vanilla extract
1 1/2 cups whole wheat flour
1 teaspoon baking soda
1 teaspoon sea salt
3 cups quick oats
1 cup walnuts or pecans
1 cup raisins or cranberries
1 cup semi sweet chocolate chips (I can't resist, maybe you can.)
cinnamon, pumpkin pie spice and allspice to taste (which means a boatload in my casa.)

Preheat oven to 350. Grease cookie sheet. Mix applesauce, spices and sugars. Add eggs and vanilla. Whip it up good. Combine flour, baking soda and salt. Add to applesauce heaven. Stir in oats, nuts and berries. Cookies will not spread much, so don't worry about placing them too close together on the pan. I like the chunky, round ball look of them (pictured) though sometimes it's nice to flatten them with a fork for that optimal cookie shape. Bake 13 minutes. Let cool on wire racks.
